Veganized Taco Dip

Just like yesterday’s post, today I’m adapting another one of my mom’s amazing recipes to fit my diet. Not only did I take the dairy out of this recipe, I took out the eggs too, so it’s completely vegan!

This is the most amazing Taco Dip ever! I realize that I should have posted this before the superbowl… it would have been a great game day snack! It’s also a good meal… Sometimes I’ll just eat this for dinner with tons of tortilla chips!

Here is the original recipe, for those who don’t mind the animal products or can’t find the substitutes in their area:

Original Taco Dip

You’ll want to layer this in a casserole dish, or a 9 x 9 cake pan.

First layer: 1 can refried beans

Second layer: 1 cup mayo, 1 cup sour cream, 1 packet taco seasoning, all mixed together

Third layer: 3 small tomatoes, or 2 bigger tomatoes, 2 bunches green onions, all chopped

Fourth layer: about 1 cup of shredded cheese of your choice.

Now here are my alterations:

Vegan Taco Dip

First layer: 1 can fat-free refried beans

Second layer: 1 cup veganaise, 1 cup tofutti sour cream, 1 packet taco seasoning, mixed together

Third layer: 3 small tomatoes, or 2 bigger tomatoes, 2 bunches green onions, all chopped

Fourth layer: about 1 cup vegan cheese (Daiya is one of my favorites)

If you want a healthier version, try mixing the taco seasoning with the refried beans, and replace the sour cream/mayonnaise layer with some mushed up avocado or guacamole. I think it would be just as good, if not even better!

Now for some photos of said taco dip, as no recipe is complete without photos: (I apologize the photos aren’t the greatest, but I went to the grocery store right when I got off work, and was starving, and all I wanted was to eat this dip. Not take photos of it, haha)

    Fortunately I do not have to follow a special diet right now, let’s hope it stays that way. Your taco dip looks delicious! I love that stuff. Of course, I would bake my or tortilla chips to dip in it!
