Hazelnut Burgers

I’m the kind of person where every time I eat a different kind of nut, it’s my new favorite. Ok, anytime I eat anything it’s my new favorite food. But for all intensive purposes, for today, the hazelnut is my favorite.

It’s best combined with chocolate, but it makes a pretty tasty burger as well! If you really wanted to, you could drizzle some chocolate sauce over it, but I don’t think I’d recommend it. This burger is best served with some vegenaise, lettuce, onion and tomato. It’s really dense and chewy (are burgers chewy?) like a regular burger. And they are filling. So so so filing. Trust me. Normally, I start to get peckish at around 9, but after eating this I was even debating if I was hungry enough for breakfast the next morning. And they’re super simple to make too!

Hazelnut Burgers
Makes- 2 very filling burgesr

2/3 cup hazelnut meal/flour
5 1/3 T vital wheat gluten
3 T bread crumbs
3 T vegetable broth
1 T soy sauce
1/4 t garlic powder
1/4 t onion powder
1/4 t paprika
salt and pepper to taste.

1 egg replacer egg
1 T almond milk
1/4 cup hazelnut flour

Mix the dry ingredients, then add the wet ingredients to the bowl. Mix together, and knead for about 2 minutes.  Shape into 2 patties.

Mix together the replacer egg and almond milk. Dip each burger into the egg mixture, then coat with the extra hazelnut flour. Let sit five minutes.

Cook on medium heat for about 6 minutes on each side, until brown. (well, they’re already brown. So brown-er.)

Then, dig in! We ate them on pretzel buns, and it was amazing, but kind of bun would do. Not feeling the carbs? eat it over a salad or just by itself!

And speaking of pretzel buns- what is up with them? I made them a couple times a few years  back in school (Ok, I’ll admit it’s because I didn’t feel like shaping actual pretzels) but now it seems like they’re everywhere! Which I’m totally ok with, BTW.

    Those look DELISH! I’ve never tried hazelnut flour! I wonder if I could try making something like this with almond flour… I do have some of that on hand!

      I wondered that too… I bet you could! I think making them with pistachios would be really interesting too!

        the egg replacer…I have been having trouble with it. The consistence is not the way it should be. Do you have any tips?

    Oooo hazelnut burger?? I want one! I promise it will be my favorite! I tend to call anything I like in front of me that I like “my favorite.” :) May I ask, what kind of bun is that burger on?

    My favorite burger is made by Burger Madness in Seattle and it is the polar opposite of vegetarian or vegan. :( It’s rare that I eat one. I eat 75% vegetarian now actually a lot of that is vegan. I want to try these hazelnut burgers and I love chickpea walnut burgers! There is a recipe for garbanzo bean meatless meatballs that would make an incredible burger recipe!

      It’s on a pretzel bun… just as amazing as the burger itself! I’m seeing pretzel bread and buns everywhere now, and I love it!

    I’m the same way, I always say “omg this is my favorite meal ever” while I’m eating it and say the exact same thing during the next meal. My boyfriend just rolls his eyes every time haha. I’ve never had a pretzel bun, but it sounds delicious. I haven’t found my perfect veggie burger yet, but if I found one that looked like this, then count me in :)

    Oh I love hazelnuts! What a good idea! I would have to get rid of the gluten though. I used to make a good almond burger…maybe its time to make that again!

    Gorgeous! Cook’s Illustrated had a veggie burger with cashews I used to love before we discovered my daughter’s food allergies. I like Sunshine (sunflowet seed) burgers if I’m not making my own.

    I <3 veggie burgers! I have yet to meet a veggie burger I do not like! My favorite are sunshine burgers :D

    Ooh, interesting! I’ve made veggie burgers with beets and walnuts before, but making them with hazelnut is new to me! I’ll have to try this sometime when I feel like havin’ a burger (which isn’t too too often, but it happens). :D

    Haha, I feel the same way about nuts! I’ve only recently begun to eat them, so I was pretty much blown away when I ate anything other than peanuts. My all time favorite are pecans- soooo good!

    I don’t eat them a lot. BUT of the store bought ones I like Dr. Praegers curry something or other. It’s vegan. If I were to make it myself I think I like lentil burgers but your burgers look totally good. :-)

    This looks really good! I love hazelnut… so yummy. My favorite veggie burger is a black bean burger mix with cashews, soy sauce and steak rub (gives it that “burger” flavor). But now I think I have to try this! It does look georgous, and I bet it stayed together well!

    This is a great concept! I am so obsessed, I mean, I love veggie burgers. Vital wheat gluten kinda freaks me out, though. Got any tips?

      Haha, VWG freaks me out a little too! I guess I always find it safer to use with other ingredients, but just using VWG and water to try and make seitan or something is always hard for me… but with hazelnut flour or chickpeas or something, it normally turns out pretty good!

    Honestly, my favorite kind of burger is a grass fed beef burger, or a salmon burger, but I do love Morningstar’s Chik’n burgers & Black Bean Burgers.

    How creative! I have an absolutely perfectly normal non-obsessive relationship with hazelnuts. I’ve made many a things with them but never thought about chopping them up and adding them to a tasty burger! Too cool… this recipe is going on the “to do” list. Thanks!

    This looks so yummy! The veggie burgers in China are all too mushy, so maybe we’ll try to make our own at home now!
