Chocolate Covered Potato Chip Cookies

I hope you all had a lovely Valentine’s Day. I feel kind of lame not having anything to post for the holiday, but in my defense, I did have a plan. I was going to bake some donuts, I had a recipe, and even heart shaped sprinkles. The one thing I didn’t have was a donut pan. And neither did any store in my town. Or the next one over.

So, I ordered some online (a mini one, a regular sized, and a heart shaped one. I got so sad when I saw that one. It would have been perfect!) and hopefully soon you’ll get to see some fun (non-valentines day) donuts. Maybe for St. Patricks Day??? Green donuts. yum.

Anyway, I have an awesome recipe to share with you all today. Chocolate Covered Potato Chip Cookies. I got the recipe from Smitten Kitchen, an awesome blog I drool over frequently.

A lot of people, like one of my cousins thought that these sounded gross. I thought they sounded amazing, and so did everyone who tasted them. Have you ever had chocolate covered potato chips? Well just imagine them in cookie form. yum.

You can find the recipe on the link above, but I did make a few changes.

1. Instead of butter I used Earth Balance.
2. I accidentally crushed waaay to many potato chips, so I just added a whole cup to the dough.
3. I melted about 1/2 a cup of chocolate chips with two tablespoons of Earth balance, and drizzled it over the tops of the cookies once they cooled. Then I sprinkled more crushed up potato chips on top.

They are amazing. They don’t taste exactly like potato chips, but you definitly can tell that there are chips in them.

I love these cookies, because they’re so different. They not your average chocolate chip cookie (which can be amazingly delicious, don’t get me wrong!)

You should definitly check out this recipe and make these! You won’t be disappointed, I promise.

    I keep seeing these potat chip or pretzle cookies popping up on the internet. They really must be some sweet and salty goodness. Can’t beat that combo.

    They sound kinda odd to me because I’m not a big potato chip fan but I love the sweet and salty combo so I’d probably like these! Favorite kind of cookie is peanut butter, hands down!

    I have had chocolate covered potato chips before, and can imagine how amazing these taste… Do I think chips in cookies sound odd? Of course, but stepping outside of the box is fun :-)

    Ooh, these look DANGEROUS!

    I saw that same recipe on Smitten Kitchen and wondered if she, as a New Yorker, wasn’t inspired by the Momofuku Milk Bar pastry book. I’m SO excited to go to a Milk Bar when I visit NY in a month — they make cakes and cookies and ice cream out of chips and pretzels and cereal and all sorts of crazy stuff! You should definitely check it out. :)
