Disclaimer: This post sadly contains no egg rolls. But more on that later.
At this point in my life, I’m not even going to bother giving excuses about why I’ve been MIA from my blog for so long.
What else can I say that you haven’t already heard? School, work, a weird slew of health problems, most just annoying that make me want to lie in bed all day and not be productive, but one that actually landed me in the ER with acute renal failure. BUT, my kidneys are in perfect working order now, and while sometimes I still just want to lie in bed (stomach issues) but I’ve decided to suck it up and continue with my life.
And of course, that means continue with my blog. I’ve missed ya’ll!!
I’ve finally gotten into the Gluten-Free eating habits that I’ve needed to be in. For some weird reason I’d crave egg rolls for days, not able to eat anything else, because nothing else sounded good and made me nauseous. I eventually caved, and would eat egg rolls, and only egg roles for days at a time.
Even though I’ve given up the egg rolls, I still crave them. I’ve been searching high and low for a G-Free alternative. Nothing so far. But, here are some things that I’ve been eating until I find my delicious egg rolls:
When I heard Domino’s was coming out with a gluten-free (except not really, because cross contamination is a HUGE threat there) crust, I had to try it. It was good, but looking at my sad little G-free pizza sitting next to my families delicious, golden, fluffy, gluten-y crust pizza, it was nothing special. I guess I’d have to say it was good for a thin crust pizza. When I ate this, my stomach was still screwed up from previous days of eating to notice if the cross contamination upset my stomach.
Gluten-free Trader Joe’s corn pasta (Which is sooo good! I haven’t tried a lot of gluten-free pastas yet, I’m a little scared, but this stuff was so cheap I had to try it. I wish I had bought more!) and zucchini, prepared simply with a little earth balance, salt, pepper, and italian seasoning.
And of course, and old favorite, wraps. I’ve been staying away from the flour tortillas and flat-out wraps (for obvious reasons) and wrapping things up in lettuce. I just can’t get on the corn tortilla bandwagon. I’m just not feeling them.
Some more pizza! I made this for when my family went up to Detroit to visit my Grandma/Aunt/Cousins. They always order pizza from this really great pizza place when we visit, and I didn’t want to miss out. I whipped up some g-free crust from a mix, then added tomato sauce, peppers, onion, pineapple, and daiya mozzarella cheese. So good!

Good to see you’re still around! I sympathize all too well with the health issues interfering with your interest in eating, much less food blogging. I can’t in good conscience recommend eating corn to someone with digestive health troubles (most GF people I know tend to have to go corn-, sugar-, and soy-free, too)… and I was never a fan of corn tortillas, either… BUT, making your own egg rolls is super easy with tortillas instead of egg roll wrappers, so if you can’t whip up a better gluten-free tortilla (they are out there, and not hard to make), try it with a corn one! I bet if it’s lightly fried or basted in a great egg-roll appropriate sauce, the corn torts would actually be pretty good. My fav recipe back in the day was “cheesecake factory’s avocado egg rolls”, which you can find on food.com if you’re interested. Yummy!
Other than that, hang in there! I’ve been GF for almost a year now and although it gets a LOT easier (eventually your body will realize that tasty-looking stuff it’s craving makes you feel awful, and it’ll start to disgust you just to think of it; plus, you’ll collect a lot of great GF recipes to take your mind off that fluffy pizza), it doesn’t really get to be any less work. I cook 100% of my meals and it’s kind of a bummer compared to how quickly everyone else eats… especially if they just order pizza or takeout… buuut I just keep in mind that I’m taking really good care of myself! Chronic health problems are *never* going to go away if we keep sneaking gluten and its fellow agitators into our bellies. It sucks that we can’t eat 90% of what’s outside the produce aisle, but it’s totally worth to feel better!

Thanks for all the great advice!! I’ll definitly have to try and stay away from corn and soy, (I already know I’m not supposed to eat sugar) And see if that helps any better than what I have been doing!
Welcome back, Liz! Being busy with work and school is great, but it sucks to hear you’ve been having so many health troubles lately!! It seems like you just can’t get a break these days.
Becoming gluten-free is really tough (even harder than being dairy-free or veggie — and you’re already both of those things!), but I know you can power through this and come out on the other side of all this crap feeling better than ever! I know we’re just blogger buddies, but even your blogger buddies are rooting for you and your good health!
I can’t wait to see what kind of original recipes you’ve come up with.

ugh— corn tortillas are the worst! BUT xina lynn’s idea of frying them sounds prettttty awesome. i can’t even imagine being GF— especially on top of vegan. my bakery has some really delicious GF cupcakes but they take about a million eggs per batch to make the texture right. although it has inspired me to try some different recipes, it’s still daunting looking at an ingredient list and not recognizing everything immediately. anyway, we’re all rootin’ for you to get into the swing of things so long story short: welcome back, liz!
I agree, the frying makes them sound much more appetizing, but then again, frying does that to almost anything! and I love bakeries that make allergen/intolerance free stuff!
i’ve heard that TJ has great gluten free pasta! I might try some myself. You make a good point though – I don’t think i’ve ever seen a gluten free egg roll! Weird…
