And by lovin’ I mean eating. Duh.
Summer is the time for….
Corn on the cob! And of course, french fries (Garlic fries from Trader joes. Has anyone had these? They are amazing!! And unfortunately for me, contain wheat. Something I did not know until I stocked up on a few more bags. lame. bye bye fries.) and, veggie dogs! Do you like my array of condiments? I can never decide.
Fresh Veggies! Fun story, when I was younger, I hated asparagus. I thought it tasted like cat pee. (Don’t even ask how I knew what that tasted like, I don’t think it was from personal experience) But, my cousin roasted some up on Easter, and I can’t get enough of the stuff now! I dress ‘em up real simple, just 2-3 tablespoons of olive oil, salt, pepper, and Trader Joes everyday seasoning. I know roasting isn’t’ really a summer cooking method, but I never seem to do what’s normal.
(veggie) Burgers! On a bed of lettuce, onion, and slathered in condiments. Sometimes, I think I’m just in it for the condiments.
Veggie filled salads! Plates like these are my favorite. I just pile a million veggies on, and I’m all set. This one is a romaine salad with onions, walnuts, strawberries, and golden raisins. On the side is a garlic dill pickle, half an avocado, more strawberries, carrot chips, cucumber, and hummus with some tahini. yummy.
Fresh fruit and berries! Summer is pretty much the best time for fresh everything. here, I’m lovin’ (No spell check, not “login’”) some fresh raspberries, puffins cereal, and coconut milk yogurt.
This last picture isn’t really a ‘summer’ thing, but I thought I would show you how I used up some of the leftovers from the Taco Tuesday I told you about yesterday. More taco salad! I love it. I think this one had chips crunched up on the bottom with refried beans on them, then piled in lettuce and veggie goodness, before being doused in sour cream and salsa. When I get on a taco salad kick, it lasts for days.
What are some of your favorite foods? What foods are you looking forward to eat once fall arrives? I know you can eat pumpkin and hot cocoa and apple cider year round, but they’re just better in the fall. One thing that makes me super sad about fall is Shipyard Pumpkinhead Ale hits stores. And sadly, this is the first fall I won’t be able to partake in it’s pumpkin pie like goodness because I’m g-free now. : / I’m definitly going to have to explore some gluten free beers soon!






Fall means kabocha squash galore. I am beyond excited haha!
I love the eats u have here! Veggie dogs are the best. When I’m craving them, I usually pop em in the micowave with some water, pour some ketchup on them, and enjoy

I’ll have to try that microwave trick, I normally get a pan out and brown it on the stove, but that can take a while, especially if it’s still frozen!

I know, it’s so cliche, but I’m looking forward to baking with pumpkin again… Have you experimented with your g-free pie crusts yet?
Yes! I can’t wait for pumpkin! I’ve been doing a little research with pie crust and gluten free baking, but I’m still a little nervous to start, haha.
I know I was just in it for the condiments! Sour cream, mayo, ketchup, honey mustard — any and all went well on burgers and fries alike. Oh, to be a kid again! Our Paleo summer has pretty much just been “greens and fish”. Nothing wrong with that, of course, but… c’mon, burgers and fries!
I was always a big fan of Alexa’s sweet potato fries. Last I checked, there was a flavor that was pretty much just potatoes, salt, and pepper. No gluten, no worries! (I actually had a nightmare recently in which I accidentally ate an entire wheat-based pizza… Gee, you think avoiding gluten has me stressed enough?
)
I love those sweet potato fries as well! I haven’t had a nightmare about eating gluten yet, but I can imagine how horrifying it might be!
I can’t wait for apple season! I swear 90% of the recipes on my site will be apple related haha! I also can’t wait for some butternut squash- definitely going to be my go-to side dish. I used to hate asparagus but picked it up at the grocery store about a month ago cause I wanted something different from my usual broccoli or spinach. I saute’d it in some olive oil until it was almost burnt and finished in with salt + pepper. It was SO good and now I can’t get enough! It’s super crispy on the outside and soft on the inside. One of my favorite veggies now!
Yum, that sounds like an awesome way to cook asparagus! I”ll have to try that out. I can’t wait for squash as well. I normally buy a whole bunch, cook it, put it in silicone muffin molds and freeze it. Once it’s frozen, I put it in a bag so i can pop a few out and defrost them so I can have squash year round. It’s definitly best fresh though!

I can’t get enough asparagus and luckily, my dad grows it but the season’s so short…I don’t like to think about autumn coming but I do love fresh apples and squash… and all the GF beers I’ve had have been brilliant, really hard to tell they’re not “normal” so go for it
haha, I’m so glad someone agrees with me on the condiments thing! Every time I say that to my mom she looks at me like I have three heads or something.
I’m obessed with aspargus as well! So good. The more burnt the better! I’m seriously the same way with condiments. My plate normally has like 20 different kinds LOL
