I know it’s a little late, but hey, it’s not 2014 yet, right?
I hope you all had a great Christmas (Or for those of you who don’t celebrate- just a good end of the year!) I know I did. I feel so fortunate to have such a great family to spend the holidays with.
And such a great kitty!!
Here’s Dwight attacking his stocking… he did manage to get all the toys out himself though! I’m surprised he didn’t ruin the stocking in the process.
Christmas time is by far one of my favorite of the year, I’m a cold-weather gal so I love snow, I love hot cocoa and tea, good food and Christmas decorations. I love the lights, and just the general sense of giving. (I try to avoid the retail scene between Thanksgiving and Christmas, and that helps me stay in a good mood! haha)
I’m also currently still in school/teaching a few classes at a community college, so I get about a month off just to relax!! (And create syllabuses, make up tests and quizzes, etc. for next semester. Not as relaxing as I’d hoped!)
One of the highlights of my Christmas was definitly the food… I shared my favorite gravy recipe with you yesterday, but there were so many other goodies!!
Cauliflower mashed potatoes, maple glazed carrots, lentil mushroom walnut balls (I skipped the cranberry sauce), and so much more! I normally make a green salad for holiday meals, just to feel like I’m eating something healthy, but I skipped it this Christmas. My mom made a yummy fruit salad that I figured was health enough.
And also, dessert!! I made this Cinnamon Roll Cheesecake and it was amazing! I didn’t have a 9″ springform pan (long story) so I had to use a 10″ one. It made the cake a little thinner, but it still turned out amazing. And of course, I had to put on some festive sprinkles!
With the holiday season, there comes so many awesome traditions as well. One my brother and I have is that I always buy him marshmallows for part of his Christmas present. My brother is a huge hot cocoa drinker in the colder months, and he was flipping through a William & Sonoma catalogue with my Grandma one Christmas when we were still in high school, and he came across some gourmet marshmallows and said he wanted them.
Now, as you all know, William and Sonoma charge an arm and a leg for everything, but I did find him some nice ones somewhere else and that didn’t cost me an entire week’s pay. Ever since, it’s been a tradition. It’s definitly gotten harder though since he’s a vegetarian now, and it’s so hard to find quality marshmallows that don’t cost a million bucks.
I think I’ve found the solution, however, enter, Kerfluffles!
I first learned about these from Jenna, who works there as a marshmallow maker. (Are you jealous? I am.) They have so many amazing flavors, both regular and vegan. AND they are really well priced. I bought my brother some vegan french vanilla ones, and also the vegan sample pack, for myself.
The sample pack included french vanilla, chai tea, gingersnap, and mint chocolate chip. They were all really good! Some vegan marshmallows are really dense or chalky, but these ones were delightfully fluffier than I was expecting. I loved them all, but I’d have to say my favorites were with the gingersnap (nice and spicy!) and the mint chocolate chip. (Some of them have actual mini chocolate chips in them!!). And also, how cute is the packaging?? They also have cute little printables you can print off on their website to make them even cuter.
