KALE!

You guys. I have discovered the most awesomest thing at the grocery store. I’m sure those of you who don’t live in East-bum-fuck Indiana probably already have this. But my grocery store just started carrying it.

Kale. Pre washed. Pre shredded. Bagged. Kale. Just like the lettuce. I think I scared the man in the produce department with my shriek of excitement. Because now, I will eat Kale so much more often. Because the only bad thing about kale is washing and de-stemming it.

So I took the entire ginormous bag and made a yummy kale salad, with some leftover quinoa and a bunch of veggies that were going to start turning bad if I didn’t eat them up soon.

Here’s what went into the mix. I didn’t measure anything. Psshh. Who does that?

I put the kale in a bowl. (Thanks captain obvious.) Then I poured in a little olive oil, lemon juice, and balsamic vinaigrette. I massaged the heck out of it. (Don’t worry, I bought it dinner first, haha.) Then I added the following ingredients:

Quinoa
Red, orange, and yellow bell peppers
Cucumber
Red Onion
Cherry Tomatos
Black Grapes
Blackberries

Then, I added a little more balsamic vinaigrette. It was aaammmaazziinnggg. So yummy.

With an Amy’s Gluten-free, Dairy-free veggie burger. (One of the BEST burgers I’ve ever had. No joke. One of my biggest fears with going g-free was that I’d never get to eat a veggie burger again.)

I Love Me Some Vegetables

And carbs. don’t get me wrong. But veggies are up there. Fo sho. Speaking of carbs and veggies, guess what’s hiding in this loaf of bread??

OMG, It’s tons of veggies!!!

I got this idea from a Rachel Ray (yes, feel free to cringe.) recipe I found ages ago, when I still ate meat. It consisted of buying a round tuscan type loaf, cutting the top off, hollowing it out, and stuffing it with artichoke hearts, roasted red peppers, lettuce, tomato, cheese, and a billion different types of lunch meats.

It was a huge hit in my family, and to be honest, I kind of missed it when I stopped eating meat. But, last week I decided I wasn’t going to let the meat eaters of the world have all the fun. I was going to make this sandwich and pack it with veggies!

Here is a list of the stuff I packed in this sandwich:
Lettuce
Cucumber
Tomato
Banana Peppers
Roasted Red Pepper
Avocado
Green Peppers
Red Onion
White Bean Hummus
Sprouts

I’m sure there is more, but I’m forgetting. It’s so good! And the best part is, it’s such a huge sandwich, there are tons of leftovers! My mom and I got this lucky sandwich three whole nights this week, yum! We ate them with sweet potato fries, or sweet potato puffs.

And It’s so easy to make too! There is a little prep involved, with cutting the veggies,  and hollowing out the bread takes a few minutes, but it’s totally worth it. I promise. You also have to keep pressing the veggies down, as you want to pack them in.

I think if I ever make this again (and I will!) I’ll add a layer of baked tofu in it for some added protein.

It’s also a great thing to make in advance. I made this in the morning before I went to work, and when I came home all I had to do was slice it up.

I was even craving sandwiches so bad, I made myself a sandwich (not as amazing as this one though, obviously) for lunch that day with some of the extra veggies that didn’t fit in the sandwich.

With even more veggies and hummus on the side, a date, cashews, and a blood orange. Amazing lunch! Sometimes I get into such a sandwich mood, wraps just won’t cut it.

Also, look what finally came in the mail!

My donut pans! I got a regular sized one, a mini one, and a heart shaped one, which isn’t pictured. That one I think is going away until next Valentine’s day. But I can still play around with the other two, and I can’t wait!

It’s fiiiiiinally Friday everyone! And I’m so excited. I’ve been so busy lately with work and homework, I haven’t had much ‘me time’. I’m excited to relax and do some baking this weekend!

Tomorrow, I’m going to a fancy shmancy charity gala where my mom works, so I’m excited to get all dressed up (And take advantage of the open bar!)

Anyway, on to business. A couple of days ago, I was given the Liebster Blog Award by my good blogging buddy, Professor Vegetable. Thanks for the award, it mean so much to get fun blog awards like this, it lets me know that people and other bloggers are actually reading what I post on here.

And now, I wanted to share with you some recent eats. Normally all I ever seem to remember to take pictures of is the salads I eat, but I’m happy to say that this past week, I’ve been craving the carbs, so just a salad won’t do.

(Sorry for the cell phone picture!) Baked tofu, quinoa, and potatoes, mushrooms, and green beans from Trader Joes.

Veggie and hummus wrap, with veggies an hummus on the side. What can I say, I like veggies and hummus, lol.

Quinoa, baked tofu, more Trader Joes potatoes/mushrooms/green beans, and some fresh veggies with some pomegranate vinaigrette to dip them in.

Ok, so heres a small salad. I can’t get away from them completely. I ate it with some tofu, broccoli, and spaetzle. (Spaetzle is a German soft egg noodle/dumpling type thing.) I had it when I was in Germany once and loved it, so when I found a box at the store I almost danced with excitement right there in the aisle. The boxed kind is definitly not as good as the real deal. But I’ll take what I can get.

Snow and Pretty Vegetables

So I’ve been whining on twitter (I whine a lot…) how it hasn’t snowed yet down her in Indiana. BUT, yesterday, THIS happened:

And that quickly turned into this:

It turned into more, but it got dark out and it was impossible to take a photo. It snowed so hard the power even went out for like, 20 minutes. I love it when the power goes out. It makes things exciting.

On a completely different subject, I finally took a photo with my light box! It wasn’t the prettiest subject, but I thought the photo turned out pretty well! (And it was DELICIOUS).

A nanner with Sunbutter on it. (Sunbutter= amazing. Don’t know how I’ve lived without it for so long.) Review coming soon! I’ve got some awesome recipes planned for it as well!)

Also, this wasn’t taken using my light box, but I thought my lunch the other day was the prettiest thing I’ve ever eaten in my life. If I didn’t already take photos of my food, I definitly would have taken a photo of this.

Look at all the pretty colors! Tons of veggies, hummus, cashews, and some leftover baked tofu. (Baked tofu= even better leftover and cold.)

Another love of my life recently, spring rolls. I think I ate them all last week. For lunch, and dinner. I probably would have eaten them for breakfast too, but that’s too much work in the morning. Especially when I’m hungry.

I normally pack my spring rolls with beans, (odd choice, I know) sprouts, bell pepper, onion, broccoli slaw, and soy sauce. yum. Also pictured, celery with chocolate almond butter, veggies and hummus, and Chocolate covered PB pretzels.

I think I’m all spring rolled out at the moment though. Which is a good thing, because I used the last of my rice paper the other day. : ( oh wells. Back to copious amounts of hummus! (Which actually never stopped…)

I’ll Put Carbs on Everything

Hey everyone! Happy Thursday! Thank you all so much for your comments on yesterday’s post, I’m glad you enjoyed the recipe! And I’m glad so many of you love bread. And carbs. Because carbs were sent down from heaven to be delicious. yum.

Speaking of food, and carbs, I’ve been really really good at taking pictures of my food lately. In fact, I’ve been so good at it, I’ve got tons of photos just sitting on my computer. And I plan on sharing some of them with you today. I don’t know if it’s just me, but I love looking at what people eat. And I just like food in general.

Oh my goodnesss, wait what, It’s not salad or hummus??? Craaazy. See, I told you I don’t only eat hummus and salad. This is baked tofu, and bulgar with zucchini. Sometimes, when I want to make a quick sauce for veggies, I’ll whisk a tablespoon of cornstarch into 1/2 a cup of veggie broth, then heat for 3-5 minutes until it gets thick. Mix with the veggies your cooking and bam. Deliciousness.

Ok, so this is a salad again. Sue me. BUUUTTT this one has whole wheat pasta on it. Do you ever put pasta on your salads? You should. It’s amazing. I think I ran out of sauce and didn’t want to waste it. And I did not regret it.

Ok, we’re getting into familiar territory here. Hummus, veggies, nuts, olives. And some leftover soup acting like salsa by dipping Trader Joes sweet potato tortilla chips in it. uhhh-mazing ness. fo’ sho’.

Some walnut/lentil loaf (coming soon!) and brussels sprouts COVERED in chickpea gravy (From Appetite for Reduction. I swear. Buy the book. Just for this recipe. Doesn’t disappoint. I could eat it as soup.) 1/4 pita with hummus, onion and sprouts, and 1/4 a pita with Trader Joe’s fig butter. (DOUBLE AMAZING.)

Apple with Justin’s chocolate almond butter, veggies and hummus. There isn’t a lot of food on this plate. At least for me. I must have been super hungry all afternoon. But then again, that happens almost every day.

Salad, peppers and hummus, and whole wheat linguini with mushroom sauce. Yumminess. To the max.

So, there is proof that I don’t only eat lettuce. Ok, there was a lot of lettuce involved in this post. But that’s ok, because I love it. I always tell my mom that I get my veggies in at lunch, and breakfast/snacks/dinner is where I get my carbs and protein.

And for more exciting news, I’m FINALLY getting my gallbladder out! yippy! The GI doctor said after my upper endoscopy that my gallbladder was definitly part of the problem, and there might be other reasons, but we’ll deal with those if every things not all better after my surgery. I’m so excited! I’ve been waiting for this for 3 whole months. It seems like so long ago I was living with the crazy alpaca lady in NC. Glad I came home, that’s for sure.

A Day With Food

Hey Everyone! Thank you all so much for your well wishes on my post yesterday! My post yesterday was all about my lazy  Tuesday, but a couple of you pointed out how productive I was. And you were right, because yesterday was the real lazy day. I stayed in bed alllll day. It was amazing.

When I got to the hospital they told me that I would be awake during the procedure but I wouldn’t remember any of it, so I was a little nervous. Getting a tube shoved down your throat isn’t the greatest feeling I imagine. But, I didn’t need to worry at all, because they were right. I literally didn’t remember any of it. I remember them putting the medicine in the IV, then the next moment I was waking up in my own bed at home four hours later. Needless to say, conscious sedation really works, lol.

I also read that a lot of people have really sore throats afterwards. Not me. In fact, I remember wondering if they even did the procedure. I wasn’t awake (or if I was I don’t remember it!) When the Doctor told the results to my dad, but he said everything looked fine, but he wasn’t sure if my gallbladder was the problem. So I don’t know what’s going on, and now I have to schedule another appointment with him.

But I did finally get to eat! And it was amazing! For lunch I had some of this that I made Tuesday…

It was just as good as it smelled. Loved it. I also ate this for dinner with some whole grain bread…

I was hoping for something similar to Cinnamon Toast Crunch, and I guess they are similar, and I like them, but I would’t say that they’re my favorite.

Overall, I didn’t eat a whole lot yesterday, as I woke up at 1 in the afternoon, and my stomach is still kinda funky from not eating anything the day before.

Also, When I came too in the middle of the afternoon and tried to piece together the events of my morning (It’s like the Hangover without all the alcohol, as my best friend put it) I found these in my purse:

There is nothing I like better than surgical socks. (That’s what I call them… I’m not sure what their real name is. They say Pillow Paws on the actual sock.) I remember thinking that they were really comfortable, and I guess my drug induced self just decided to take them. Oops. Maybe they told me I could have them. I’ll never know!

Have you ever worn pillow paws? Do you love them as much as I do? (haha, trick question, that’s IMPOSSIBLE! just kidding.) What was the best thing you ate today/yesterday? 

Lunch Rut

I often find myself in food ruts, like much of the blog world. And I know sometimes it can be a bad thing, but I’m loving the rut I’ve been in lately when it comes to lunch!

I know most vegetarians try to stay away from the ‘vegetarians only eat salads’ and I’m not saying I only eat salads (Disclaimer: I don’t only eat salads!) But I do eat them a lot. At first, I thought it was because I just really like lettuce, then I realized that if it wasn’t for the salad dressing, I would hate it. So maybe I just really like salad dressing? And hummus. I could never forget hummus.

So here are some pictures of some of my recent lunches… filled with veggies and hummus!

Recent Munchies

Hey everyone! So glad you liked my Pear Muffins with Dill! Even if you’re unsure about the dill part, you can just make them with pear (or even apple!) and they’ll be amazing.

Also, the title of yesterday’s post “Muffins are for people who don’t have the nads to eat cake for breakfast” comes from the TV show Kitchen Confidential. It was a couple years ago, and only lasted one season. But it was good! Bradley Cooper was in it, but it was before he got really famous. Maybe I’m just a culinary school nerd, lol.

I hope you all had a good weekend, I spent part of mine making arts and crafts projects! So much fun, I haven’t been creative like that in a long time!

Anyways, today I’ve got some recent eats for you! I hope you find them as exciting as I do!

oohhh emmmm geee, Hot and spicy cheez its. My cousin introduced me to them when we were on vacation, and I am in love. I only buy them once in a blue moon though, as a treat.

Pasta Primavera

I was trying to make the Pasta Primavera that one of my favorite local restaurants makes, but it didn’t turn out the same. It was still good though! (Oh, and p.s.- this is the serving bowl. It’s not all for me!)

Leftovers! pasta and the blob of red is a meatless meatloaf covered in marinara sauce. And of course, hummus and some dippers!

Stir Fry!

I ate this stir fry with some of these. Normally, when I make stir fries they’re either hit or miss, but this one was definitly a hit! And I normally don’t write down what I put in them or how much, so I can never recreate them, but this time I did, so I’ll be posting the recipe sometime this week hopefully!

Pita Pizzas

Thanks for your comments on yesterday’s post! My mom said her coworker loved the cake. I’m glad, because I love making people happy with sugary colorful baked goods : )

Now onto more pressing matters, lol…

I don’t know what it is, but every couple of weeks, I feel the need to inhale as much hummus as I possibly can. I mean, I always like hummus, but about one week a month I go through twice as much as usual.

This week is one of those weeks. I’m all about the Pita Pizza.

And they’re really easy to make! Just take a pita (I used whole wheat) and spread hummus on it like you would pizza sauce. Then top it with your favorite veggies. I used beans, onion, broccoli slaw, cucumbers, olives, and sprouts. Yum!

And of course on the side, some grape tomatoes from the farmers market with… more hummus.

Another thing I can’t get enough of lately is Disney music. I listen to it non stop. I’m so weird, I know. I also have been spending hours in Pinterest, but that’s nothing out of the ordinary.

Yummy Yummy in My Tummy

Hey everyone! I’m glad you enjoyed the Lemon Meringue Tartlettes yesterday! They are delicious and adorable single servings! (or half, or 1/3 servings, because you’ll probably want to eat more than one…)

So I’ve noticed a large number of photos accumulating on my computer of just random meals I’ve eaten recently, so I’ve decided to share those with you!

Saaaalad! Sometimes (Ok, almost every day) I get this crazy craving for a salad. It’s just such an easy way to get in tons of vegetables. This one consists of romaine lettuce, onions, tomatoes, beans, tofu, sprouts, and cucumber. On the side is some leftover roasted veggie tart from dinner the night before. Yummy.

Salad take two. This one is almost the same with the addition of avocado (Gotta love healthy fats!) mango, and hummus for my cucumber. I normally eat my salads with smoothies, which aren’t’ pictured. Well, you can kind of see it off to the right.

This was dinner one night. Veggie wrap consisting of lettuce, beans, onion, cucumber, spouts, bell peppers, and honey mustard, all on a whole wheat (With flax!) flat-out wrap. yum. On the side is some roasted veggies, a lemon larabar, and a veggie bar.

Here is the inside of another wrap. Lettuce, hard boiled egg, onions, and TONS of black beans, all drizzled with mustard.

And here’s a random snack, apple with almond butter! double yum. One of my favorite snacks to eat when I’m really hungry.
