Taco Tuesdays

Ok- I’ll admit. I didn’t really eat this on a Tuesday. Well, actually, maybe I did. This meal was made a while ago. BUT it’s definitly one of those meals like I mentioned yesterday, that doesn’t take a lot of time.

There is a little bit of prep work with chopping up veggies, but my brother who’s home from college for the summer has been hounding me to teach him how to cook (I think it’s to impress the ladies… lol) So he’s been awesome at getting veggies chopped and prepped, and has become an expert at roasting everything from asparagus to zucchini.

So, Here is the easy meal:

I really need to start taking nicer photos. Anyway, this is Taco Tofu, rice, and taco salad. I ended up mixing everything on the plate together. So good. This photo was also pre-dressing. I slathered it in dairy-free sour cream and salsa.

Believe it or not, the tofu only had THREE ingredients in it. Talk about easy.

Taco Tofu
1 block tofu, pressed and sliced into 8 pieces
1 packet taco seasoning
1/3 cup water

Mix the water and the taco seasoning together, and pour into a greased baking dish. (Or a tupperware container, then move to a baking dish)

Let marinate for at least an hour, flipping the tofu over halfway through. Bake at 375 degrees F for 30-45 minutes. It’s that easy!

At first I was worried that it would be too salty or too much taco seasoning, because it was so concentrated, but it ended up being just perfect!

For the salad, I put shredded romaine, tomatoes, olives, black beans, and green pepper. I had onion and crushed tortilla chips on the side.

We also had guacamole, which is a must when having Mexican food. My brother is also an ace at making that- of course I had to teach him the important things first! If there are any girls out there who want to be hooked up with an awesome vegetarian cook, let me know and I’ll see what I can do, lol.

My Appetite is Back!!

Hey Lovelies!! Thank you all so much for you well wishes on my last post. My tummy and everything else inside my body is doing just great now!

There was a couple days though after I came home from the hospital where something weird happened. I wasn’t hungry. Just thinking about food made me feel kinda nauseous. Hence why I haven’t’ been blogging much. What good is a food blog if you don’t want to eat anything? I haven’t even really wanted to read blogs, or even spend hours on pinterest like I normally do. It was really, really weird. Especially for someone who gets so much joy out of eating and making food.

But, those days are behind me, and I think I’m getting my appetite back. I think it may have been the antibiotics I was on. So glad that’s all over.

I thought I’d share with you some photos of some recent eats. It’s too bad I didn’t get to snap any shots of hospital food. It actually wasn’t that bad! They even had a pretty decent veggie burger.

uummmm Panera? yes please. Mediterranean veggie sandwich and soy chai tea latte.

Dayia pepperjack grilled cheese sandwich on Whole Food’s sourdough bread (sourdough= best grilled cheese. ever.) and Amy’s chicken less noodle soup. Perfect for a cold winter night. (Which we haven’t had many of btw. I bet Al Gore is ecstatic because now it’s probably impossible to not believe in global warming.)

(Sorry for the fuzzy picture- it was taken on my (non-smart) phone.) Last night my family went out to eat at a cute little local burger place, not for the burgers, but because someone told us that they have the ‘best coke and breadsticks in town’. I don’t normally drink soda, but I got a cherry coke and they add their own cherry syrup, it was amazing. I don’t normally use the word “fresh” to describe soda, but I would this one! They also had a pretty decent salad bar!

That’s all for now, but hopefully I’ll be in the kitchen baking something soon so I can share it with you all! I’ve got a long list of things that I want to try out and make, so be prepared for all that!

Home is Where the Good Food is

After living in North Dakota for most of my life, it is definitly a place I would call home. Its so unfortunate that I didn’t even know the deliciousness that was produced in my home state until I left it.

Yes, I’m talking about SunButter. I know, I know, I’m late on this one. People keep telling me that they’ve known about the amazingness of SunButter for ages. But that’s ok. Because I know all about it now.

The awesome folks over at SunButter sent me some free products to review, and I am so thankful!

I tried the natural crunch, and natural no stir creamy. Both were AMAZING. I was expecting something similar to peanut butter, but what I got was so much more. I’ve always had a love/hate relationship with PB, but with Sunbutter, it’s all love. It’s also a great substitute for those allergic to peanuts.

It’s creamy (or crunchy!) but it’s got such a distinct sunflower seed flavor, and I think that’s what makes it so amazing. I don’t even think I could say I’ve got a major love for plain old sunflower seeds, but it totally changes when it’s made into a spread like this. I would say it’s got a more savory flavor than peanut butter, but it definitly goes with sweet things. For example, I think I’ve eaten about a billion sunbutter bananas…

So so so good.

They also have a ton of different products… creamy, crunchy, organic, natural, with omega-3′s, they even sell a 5 pound pail. That’s definitly something I could use! Too bad I already sent my Christmas list to Santa.

I’ve got a million recipe ideas in my head for this stuff, and I’m going to share one of my favorite ones with you now. It’s also the easiest. Only 4 ingredients!

SunButter Balls

1/2 crunchy SunButter (You could use creamy, but I love the texture the crunch adds!)
3T Dry soy milk powder (Soy protein powder works as well, and adds even more protein!)
2T agave syrup or honey 
1/4 cup sesame seeds
1T red/green sprinkles (optional. but they do add some fun holiday flair!)

Stir the sunbutter, milk powder, and agave together. Refrigerate for half an hour. Then, shape into 10 tablespoon sized balls, and roll in the sesame seeds, and sprinkles. Try not to devour them all at once!

Another amazing thing about SunButter is it’s nutritional stats. I’m not huge on reading food labels, but it’s kind of hard not to when they’re so amazing. In two tablespoons of this stuff (at 200 calories) you get a whopping 7 grams of protein. 7!! And for me, It’s hard to just eat 2 tablespoons at a time.

They would also make great Christmas presents, especially when you get them all dolled up with sprinkles and cute petit four cups!

Whole Foods/ Trader Joes Love

I love Whole Foods.

I love Trader Joes.

No joke. I am in love with them. Unfortunately, the closest ones to me are an hour and a half away. So when I go, I stock up. These are literally the closest places I can get dairy-free cream cheese, butter, and coconut milk yogurt. I’m lucky the grocery stores in my town carry almond and soy milk. : /

Anyway, last week I got the opportunity to go to these two fabulous stores, so I thought I’d dedicate a post to some of  my favorite things (not all though- that’d be a long post!) from these two stores, as well as some new things I discovered this trip!

Beverages! Coconut water (this time, chocolate flavor!) and Kombucha. Both these drinks are too expensive to drink all the time, but I only go to Whole Foods about once a month, So I like to treat myself!

Coconut yogurt. I buy this stuff by the case. (Which gives me a 30% discount at Whole Foods!) My most recent trip it was on sale, So I bought a ton! My favorite flavor is chocolate. It’s like chocolate pudding. But I can get away with eating it for breakfast!

Earth Balance, my favorite vegan buttery spread of all time. Nothing beats this stuff. And since they don’t sell it at my grocery store, I buy the tub that’s as big as my head.


Ice Cream. I have a hard time keeping this frozen in the car, but I bring a cooler full of ice with me. I’m dedicated. I love love love So Delicious coconut ice cream, and this time I bought some Rice carrot cake ice cream as well. Uh Mah Zing. Tastes just like carrot cake. Don’t know how they do it. And of course, my all time favorite ice cream, Trader Joe’s Chocolate Cherry Chip.


Chocolate Hazelnut Milk. This was a recent find, and my first time trying this. It was like liquid Nutella. So amazing. I’m planning on making some ice cream with this stuff : )

Trader Joe’s Salsa Chips. I cannot get enough of these. I could probably eat a whole bag in one sitting. They taste just like salsa. If that comment was even needed.


Chips! I know Trader Joe’s is technically considered a health food store, but for some reason I come out of it with a cart full of junk food. Baked onion rings, Flaxseed tortilla chips, and veggie chips are some more of my favorite chips from TJ’s.


And last but not least, a few TJ’s staples. First, Frozen Fruit. Berries, mango, pineapple, it’s all so cheap! Once again, this has to ride in the cooler in my car. Second, Veggie corn dogs. These taste just like the real deal. And lastly,  yogurt cheese. It’s made with cow’s milk, but it’s lactose free!

So, there you go. Now mind you, this isn’t everything that I buy at Trader Joes and Whole Foods, but they’re some of my favorites!

Cake Batter Bites

These are by far one of my favorite snacks. I didn’t intend for them to taste like cake batter, but they do! Just like licking the bowl- and no risk of salmonella! And they’re amazing… if I do say so myself. Even my dad loves them, and if it’s got anything soy in it/not chocolate- he’s not usually into it.

Aaaaannnnddd they’re super simple to make, and only 4 ingredients!


This recipe makes 2 big ‘blobs’ if you will.

4 tablespoons soy milk powder

4 tablespoons all-purpose flour

1 tablespoon agave syrup

1/2 teaspoon vanilla extract

Mix everything together, and refrigerate for several hours until it gets firmer. Then roll into balls, and store in the fridge. When I first made them, I put them directly into plastic wrap and froze them for about an hour, but it kind of stuck to the plastic, so think firming it up first will be a lot better.

Theres also a million-bazillion possibilities for these. you could add cocoa powder, chocolate or carob chips, flavored extracts, dried fruit, coconut, etc.

Protein Power

Lately I have been bored by my food. I’m getting sick of salads and tofu. And this is right after I stated that I am a salad fiend!

I’m going to try to move on from my beloved salads, and mix it up a bit. Also, My protein consumption is mainly made up of soy, and there are so many great products out there, I’m breaking out more whole grains, granola, nuts, and nut butters! I’m really excited about it. Onto my first love affair…


Kashi U -one of my all time favorite granolas with one of my all time favorite peanut butters- Dark Chocolate Dream from Peanut Butter & Co. I just dip my spoon in the peanut butter then in the granola- It’s the perfect snack!

BTW- This granola is packed with nutrients and vitamins, It’s crazy! The box is also make with 100% wind power and is completely compostable because they use biodegradable soy based ink!

I love this granola so much I even eat it on my ice cream..


Also last night something amazing happened… I worked out. I’m not the biggest exerciser out there, and While I don’t consider myself fat by any means I’m defiantly out of shape. So this was a big deal for me. I rode our stationary exercise bike for 3 full episodes of the office! (I want to thank Michael Scott for getting me through it!)

When I was done, I indulged in another one of my recent cravings.. bananas. and soygurt. (=soy yogurt)


Bananas and soygurt doused in agave and cinnamon of course…. Delicious.
